I rarely get to cook such exotic fare here at home. I have made Chicken & Fish Jambalaya twice, once with Blaze. I think I'll add that to the holiday menu!

I cooked this year's Thanksgiving turkey. It was brined, brushed with melted better and put into a roasting bag with parsley, sage, rosemary, thyme, leeks, carrots, celery, and parsnips. It was roasted breast-side down. This will be repeated for Christmas.

Parsnips are a very underrated vegetable. They have a wonderful smell and a pleasant sweet, spicy flavor. They deserve more respect.

I think I've only tried parsnips once or twice. Potatoes, carrots and sweet potatoes are considerably more common here.
