Actually, FC, farmed fish are fresh and can be quite delicious. Tilapia is wonderful if sauteed in olive oil (or butter) and garlic. Add some white wine and lemon juice to the pan scrapings, reduce, add chicken stock and a bit of corn starch. When the stock thickens, add capers and parsely. It's very tasty.
