Well, I have a faboo recipe for banana nut bread. It uses three bananas instead of the usual two and uses no oil. Forgive the use of US measurements:
* 3 ripe bananas, mashed
* 2 eggs, well beaten
* 2 cups all-purpose flour
* 2/3 cup granulated sugar
* 1 teaspoon salt
* 1 teaspoon baking soda
* 1/2 cup chopped pecans
* 1 teaspoon vanilla extract
* Dash of ground cinnamon
Preheat oven to 350F.
Combine the mashed bananas and the beaten eggs in a large bowl.
In a separate bowl, sift together the flour, sugar, salt and soda. Slowly add the flour mixture to the banana mixture. Stir in the pecans. Add vanilla and cinnamon.
Pour batter into a loaf pan and bake for 50-60 minutes, until a toothpick comes out clean.
This is very good spread with butter and blackberry jam.
