Method for preparing Gates.
Garlic Fried Butterflied Gates
1) Quick Freeze Gates. 2) Some diners explicitly call for the head to be left on. If you are preparing outside these gastronomical traditions you may chop the head off. 3) Using "deveining shears" remove the alimentary canal, rinsing under cold water to remove any bits sticking to the flesh. 4) Remove the carapace. 5) Pull off the legs and foreclaws with the carapace. 6) Slice Gates longitudinally along the medial line of the posterior aspect, cutting approximately 75% through the depth of his body. 7) Using your fingers spread Gates along the incision you have just made spreading him "butterfly style". 8) Mix several egg yolks with an equal volume of buttermilk. 9) In a bowl place breadcrumbs seasoned with salt, pepper and a touch of thyme. 10) Wet Gates in the buttermilk egg mixture and dredge through the breadcrumb mix, thoroughly coating him. 11) Saute minced garlic in butter for 45 seconds over medium high heat. Put Gates in the pan with the posterior aspect down. 12) Cook until the coating is golden brown, flipping to brown the other side when the first side reaches the desired crispness. 13) When the flesh turns opaque Gates is done. 14) Serve with mango chutney, a side of mashed potatoes and seasonable vegetables accompanied by an off dry Gurwurztraminer.

Thanks, Tamper Lad. I was looking for that recipe in my copy of "Tasty Vyrga Vittles", by R'as al Ghul (find it now on Amazon.com!) Of course, Gates' Proletariat sensiblities would object to being served in any manner.
